
This famous soup from India has various recipes inspired by Anglo-Indian flavours, and has been popularized in North America by TV’s Seinfeld in the “Soup Nazi” episode. Mulligatawny literally means “pepper water”. |
STEP 1
Ingredients

4 cups water
1 cup tomato sauce
0.25 cup diced onion
1 crushed garlic clove
1/4 cup chopped basil
1.5 cups milk
0.5 cup cream

2 tsp sugar
1 tsp lemon juice
1 tsp cumin seeds
0.5 tsp curry powder
0.5 tsp cayenne pepper
2 tbsp. canola oil
Salt and pepper to taste |

Preparation

In a pot, heat oil and sauté onions and cumin seeds.

Then add garlic, red peppers, and tomato paste stirring continuously.

Add water, basil, lemon juice, cayenne pepper, curry powder, salt and pepper.

Cook about 30 min or until vegetables are tender.

Add milk.

Purée in blender.

Return soup to pot and stir in cream and sugar.

STEP 2
Ingredients
|
1 potato peeled & diced
1 carrot, peeled & diced
1 stalk celery
0.25 cup peeled & diced eggplant
0.25 cup green peas

0.25 cup tomato sauce
0.25 cup water
1 bay leaf
Salt and pepper to taste
2 tbsp. canola oil |

Preparation

Combine all ingredients in a large pot over medium heat.

Let vegetables simmer while stirring occasionally until cooked.

Pour finished product into pot from Step 1 and let simmer for 15 minutes while stirring occasionally.
